Let’s make sourdough simple again! Two micro habi Let’s make sourdough simple again!

Two micro habits to implement if you’re maintaining your starter in the fridge:
-Remove your starting amount when your whole mixture is peaked and active when you return it to the fridge 
-Feed on the heavier side of flour I always add just a bit more flour than what I need for the recipe because my starter likes to be thicker 

My great grandfather taught us that when we are not baking our sourdough starter lives in the fridge and there is absolutely no need to touch it or feed it on the weekly basis. So if I’m not baking, I am 100% hands off. I only feed my starter when I am baking.

How often I bake is really determined by my meal plan for that week any special events I have going on or if I need to fill the freezer. So I could bake every week or it could be once a month or I even just went all summer long. (3.5 months) with my starter being left in the fridge.

HERES my baking rhythm:
When I bake, I look to see what my recipe needs/calls for. (See the reel right before this one)
-Remove my starter from the fridge
-Feed my starter according to the recipe (math below)
-Let rest to become active
-Place the lid to my jar as a reminder to reserve my starting amount
-Once active remove my starting amount
-Then get to mixing and into the rest of the recipe

This is the only method for maintaining my sourdou This is the only method for maintaining my sourdough I know. It’s the method my great grandfather taught us, what my dad did growing up and how I practice sourdough. 

I grew up with sourdough and have seen how hardy and flexible and resilient it truly is. 

My great grandfather taught us: if you’re not baking with sourdough, it’s hands off and lives in the fridge

What I gleaned is that sourdough can be a part of your life but your life DOES NOT need to revolve around sourdough. There is a freedom that comes with the Cowboy Way of sourdough!!

Here’s the short version of the Cowboy Way:
• we don’t discard
• we only feed our starter when we want to bake
• we keep our starters in the fridge
• we keep a small amount of a mother starter at all times
• we don’t feel pressured into making recipes we don’t typically eat
• we don’t spend a fortune on flour because we are discarding
• we let sourdough be a part of our life
• we don’t let our lives revolve around sourdough

Here’s what you need to know To make a levain, y Here’s what you need to know 

To make a levain, you use a small amount of starter and add large amounts of flour and water 

It might look like this:
10g starter
70g water
70g flour 
Total levain made: 150g

Then once this is active and you are about to mix your loaf, you use the ENTIRETY of that mixture. 

There’s no reserving your initial starting amount. 

You’re literally making enough starter for your recipe

Are all recipes written like this? No

What if you don’t want to make a levain but want to keep creating sourdough the cowboy way (the no discard method I teach)? 
Then you would just make an active starter instead and feed your starter according your the total levain need of 150g

I hope this helps bring clarity to what you’re making and makes sourdough simple again.
