This is outside the homestead…day 9 of the #backtoprairieliving challenge Admittedly this was a difficult theme to discuss because I’m a homebody. I love to just be at home creating and preserving. And if I’m not at home, I’m usually at someone else’s home(stead) helping. Here’s the thing… Shopping local isn’t just Here’s the thing… Shopping local isn’t just about buying from small businesses but also looking to see what’s available for your resource in your area. Welcome to day 8 of the #backtoprairieliving challenge where we’re discussing shopping local! Here are some things to think about: Can you hunt? Then start and butcher at home Can you glean from a neighbors yard? Get permission and start picking Can you barter and trade for services? Then start swapping. Work out a beneficial agreement that both parties agree upon and you’re set. I’m NOT saying don’t shop, because I know each small business says a prayer of gratitude when they’re supported. My challenge is can you shop right out your back door by foraging and thinking outside the box?? My next shopping trip….foraging for rose hips! It’s a misconception that the pressure cooker ca It’s a misconception that the pressure cooker can be used to can low acid products. Welcome to day 7 of the #backtoprairieliving challenge where we’re talking preservation today. Yes a pressure cooker pressurizes BUT not to the safe level you need to preserve low acid foods like meat, vegetables and broth. A pressure cooker does not have the gauge or weight to build up pressure (and temperature) to a level you can control to appropriately can and process these low acid foods. A pressure canner uses a weight or weighted gauge to enhance the safety of at home canning. These gauge and weight visually gives you feedback to know if you’re in a safe range to start your processing timer. How to manage the crust on a loaf of bread! Welco How to manage the crust on a loaf of bread! Welcome to day 6 of the #backtoprairieliving hashtag challenge My name is Boots and today’s my favorite day because we get to talk BREAD! If you struggle with a super crusty loaf of bread, here are my tips. My husband isn’t a crusty bread fan (meanwhile I love it!) but as the chef and baker in the house I choose to create what he enjoys: Know your recipe! An artisan loaf will have a thicker crust! ESPECIALLY when it’s fresh (think 24 hours old). As it is stored the crust does soften especially when it’s stored in beeswax wraps For artisan loaves (the high hydration sourdough loaves) place a baking sheet halfway through the bake. This will reflect some direct heat from the bottom of your loaves but not change the oven temperature And if you do get a crusty crusty loaf, just make bread crumbs Butter the tops of your loaves! This adds wonder flavor and softens the top. My favorite butters are @minerva_dairy and @rumianocheese Proper storage is critical! Store in beeswax wraps (like the ones @farmandhive creates) or in @keeki_co bags Have other bread questions? I’ll answer them in the comments! I know what I’m loading up on today after yester I know what I’m loading up on today after yesterday’s events! I’ll be supporting my respiratory system with some horseradish. Welcome back to days 4&5 of the #backtoprairieliving challenge!!! Day 4: herbs Day 5: come with me I was so blessed this week that a friend asked me over to come pick an extra horseradish that volunteered itself in a garden spot meant for clover. I ended up picking just shy of 2 pounds of horseradish and bonus the leaves are medicinal. Everything is washed and today is processing day where I’ll be preparing it ,slicing, for the freeze dry to be able to stock my pantry with horseradish powder! Once powdered, I can add it to sour cream or mayo for an instant creamy horseradish sauce. Have you ever harvested horseradish before?? Redundancy is the name of the game! Welcome to da Redundancy is the name of the game! Welcome to day 3 of the #backtoprairieliving challenge: pantry tour! I have a backup to my backup creating a layer system because I’m not going to run to the store for a single ingredient and when you live on a homestead you get creative. I keep handy my go to everyday ingredients, like: flour, oil, sugar, salt & spices. When those are running low, I head to a larger container to refill, creating my middle layer. Then when I need to refill my middle layer, I head to my long term storage layer. This method creates a cycle where I can rotate my food ingredients. Layer 1• within reach Layer 2• fill ‘er up Layer 3• the back up plan! Additionally, layer 4 is my OH NO! Emergency layer where I have done for me products like some meals from @thereal4patriots but these are to only be used in case of emergency The last layer to my pantry is my herbal and wellness pantry that contains dried herbs, spices, flowers and berries so that I can create teas, tinctures, elixirs and more.
