Jam Session: Episode One Welcome friends to my n Jam Session: Episode One 

Welcome friends to my new series where I’m breaking it down step by step how to make Jam (and more home preserved goodies but this week our focus is on jam)

Homemade Jam is the easiest preserve to start with. 

If you can boil water, you can be successful in canning. 

Todays lesson is Mise en Place

Get everything in its place before you even start

Everything will need a clean and inspection 

Set out your canner and your stock pot (fill your canner at least halfway with water and get it warming)

Inspect your jars for chips and cracks. If you find them, don’t use that jar. 

Wash your fruits 

Have a towel on the counter and have your jar lifter, debubbler, lid magnet, funnel set and ladle ready

I don’t know what to do with my sourdough starter I don’t know what to do with my sourdough starter

Picture this, you’ve just gone through the effort of getting a sourdough starter (whether creating a starter or obtaining what) but now you’re just stuck with decision fatigue

I don’t know what to do

Well you can get to baking or decide how you want to care for it. 

But whatever you dont let it just rest on the counter

For recipes, I would advise just start making one thing at a time. Find your rhythm by making it over and over again, getting comfortable with feeding your starter, mixing your recipe, baking. 

If you’re looking at maintaining it, you basically have the discard method (feed & discard daily) or you have the COWBOY WAY. (Now there are some variations but one I only have so much room for a caption and two I’m trying to simplify this)

Owyhee for the mountain range my great grandfather used to cowboy though packing his sourdough starter with him from cabin to cabin. My starter comes from his starter.

How do you make sourdough bread? Starter, flour, w How do you make sourdough bread?
Starter, flour, water, and SALT!!

SALT is the one ingredient I don’t skimp on in recipes.

I know we try to avoid it and we try to eliminate it from recipes. But can I steal your attention for a bit longer as we discuss why salt is actually a GOOD ingredient?

Chemistry taught me salt was sodium chloride but @redmondrealsalt has changed my mind.

Salt is more than just sodium and chloride: NaCl
Redmond salt is so much more!
Redmond salt contains trace minerals. 
Redmond salt is unrefined.
And Redmond salt is mined in Utah 
It’s salt where you can actually see and taste the difference.

But salt is essential for living. It’s a crucial electrolyte. More and more studies are showing the health benefits of salt and that we shouldn’t be ditching salt. 

RATHER, let’s choose better. 
Why? Because if you go go the store and grab a table salt from the shelf you’ll see two ingredients: salt and yellow prussiate of potash** and even (wait for it)…SUGAR! Sugar is a filler in this case. 

The point is, if you know better options, you’ll choose better options. 

Salt ENHANCES flavor to your sourdough creations
And
With fermentation salt is needed! It actually aids in fermentation. Yielding a better product

So if your bread is tasting flat and lackluster:
CHANGE YOUR SALT

Ditch the generic table salt and swap it for a better for you, more flavorful salt!

Whatever your choice, mine is and always will be @redmondrealsalt just be sure you’re choosing real salt with trace minerals and it doesn’t have the sugar.

Fresh milled flour can last at room temperature fo Fresh milled flour can last at room temperature for several days (I like to use within a week)

If I mill too much or I just want to meal prep some flour: freezing your fresh milled flour will be the best way to preserve those nutrients. 

Fresh milled flour can be frozen for months, if not close to a year with proper freezing practices. Just allow it to come to room temperature before using.
