ITS TIME TO BRING AWARENESS

This is NOT medical advice, I’m merely sharing something I found fascinating from a man named Dr. Li

I am not telling you how YOU should create sourdough. That’s the beauty! You can make it how you want.

I’m actually just challenging you in your thinking to stop and ponder this

Just because you add sourdough to a recipe does not make it easier to digest.

Sourdough is a ferment so let your recipe ferment.

If you’re adding sourdough discard and baking right away you are:
Adding moisture and adding flavor and a binding agent

But unless you ferment it, it’s not going to be easier and on your gut

Instead, swap out that discard for active starter and let it ferment for 24 hours.

Fermentation allows to flour to be broken down better and some of the sugars to be used as “food” for the fermentation process.

My second pet peeve…same day bakes. Yall. Why are we rushing the sourdough process and not harnessing its true power?!

PPS: if you feel like I’m telling you this is the only way, we’re not communicating. Secondly, yes I do believe celiacs is real I have a family member with it. Sourdough isn’t a once size fix all but I do believe in the power of fermentation.

Are you ready to break up with feeding and discard

Are you ready to break up with feeding and discarding your sourdough starter everyday?!

Feeding and discarding is only essential in the creation of your sourdough starter

Once it’s established, you don’t need to practice this any longer.

Here’s how you make the transition, the next time you feed your starter and it’s become active, reserve your starting amount (you’ll often hear me call this your MOTHER starter) I like to save 1/4-1/2 cup. This is placed into a clean jar and into the fridge.

Whatever you have remaining from your feeding you’ll need to bake with or add to your discard pile but this is the last time you have to do this.

Make a big batch of pancakes with that discard and freeze them to make meal time easier and

Here’s the short version of the Cowboy Way:
• we don’t discard
• we only feed our starter when we want to bake
• we keep our starters in the fridge
• we keep a small amount of a mother starter at all times
• we don’t feel pressured into making recipes we don’t typically eat
• we don’t spend a fortune on flour because we are discarding
• we let sourdough be a part of our life
• we don’t let our lives revolve around sourdough

It’s time to get creative!

I get asked frequently what if I don’t have (blank) sourdough tool?! What do I do???

I’m one the mindset of get creative and use what you have at home

If you don’t have, don’t feel the need to rush out and buy equipment

Bannetons and breadbaskets can be made with a bowl and tea towel

Use a sharp knife if you don’t have a lame

Loaf pans can be used instead of Dutch ovens

How to manage the crust on a loaf of bread!

If you struggle with a super crusty loaf of bread, here are my tips. My husband isn’t a crusty bread fan (meanwhile I love it!) but as the chef and baker in the house I choose to create what he enjoys:

Know your recipe! An artisan loaf will have a thicker crust! ESPECIALLY when it’s fresh (think 24 hours old). As it is stored the crust does soften especially when it’s stored in beeswax wraps

For artisan loaves (the high hydration sourdough loaves) place a baking sheet halfway through the bake. This will reflect some direct heat from the bottom of your loaves but not change the oven temperature

And if you do get a crusty crusty loaf, just make bread crumbs

Butter the tops of your loaves! This adds wonder flavor and softens the top. My favorite butters are @minerva_dairy and @rumianocheese

Proper storage is critical! Store in beeswax wraps (like the ones @farmandhive creates) or in @keeki_co bags

Tired of your sourdough loaves becoming hard after just one day being baked…

Here’s one simple tip:
Store your loaf in BEESWAX!!

Premade beeswax “paper” is perfect for a cut to size, odd sized loafs, gifting or if I want the beeswax to fully encompass my loaf

Or get precut beefswax and start replacing your Saran wrap use in the kitchen.

I never store beeswax in the freezer. (What we’re talking here is not a longterm freezer method)

Using beeswax my loafs stay fresh for up to two weeks (if it lasts that long)

On a RARE occasion my loafs have molded but there’s 3 factors: time (pushing 2+ weeks) or warmth or I didn’t clean the beeswax well enough… which means BEESWAX IS REUSABLE!

Beeswax helps retain moisture
Beeswax has anti microbial properties as well as being safe and nontoxic if ingested. It also has anti fungal properties too.

It’s seriously incredible what we have access to in nature.

The long term option is freezer safe bags to place that second loaf into the freezer for the future.

When ready, remove the night before, do not unseal the bag, and allow to thaw. Cut and enjoy! Whatever part of the bread remains, store in your beeswax wrap!

Comment BREAD to get today’s sourdough resources

Today is all about scoring and baking!

If you don’t have a bread lame, just use a sharp pairing knife.

Be intentional and move quickly. Don’t over think just do.
I don’t make fancy scoring designs. I keep it basic with a giant X or a side slash and maybe throw in some wheat stalks. The design is there for aesthetic but it doesn’t add to the flavor

When I bake my loaves, I prefer to heat my Dutch ovens with the lids on while the oven preheats to 450.

I keep my racks in the middle of the oven

I bake my loaves for 30 minutes with the lids on
THEN at the 30 minute mark, I add a baking sheet to the rack underneath where my Dutch ovens are. I also remove the lids and I personally rotate the Dutch oven 180 degrees.

I continue to bake for another 25 minutes.

I get consistently baked loaves each and every time with this timeline.

Remove from the oven and the Dutch oven and allow to cool.

I wait for at least 2 hours to slice open. Any earlier and the dough will still feel gummy and it can squish when you cut it
