It’s no secret I love a fully stocked pantry But It’s no secret I love a fully stocked pantry

But when buying in bulk isn’t an option, your short on space or your grocery budget is just plum tight, I love the one for now, two for later model

It allows you to subtly plus up your cupboard without the overwhelm of a whole case

When you put your items away and organizing, remember first in, first out. Date your items with a sharpie for easy to see expiration dates

Now I do love buying in cases. My usual bulk items are canned tomatoes, green beans, corn, bulk grains and nuts/nut butter

Because I live rurally having a well stocked pantry means fewer trips to town and to the grocery store, we get creative when we run out and I usually only shop about once a month and end up “shopping” from the CANTRY

As a home baker I use both organic all purpose flour and fresh milled, but I’m not an all or nothing. Personally, I do this to bring diversity to our food. 

👉🏽This whole shaming bit “of your store bought flour is dead needs” to stop. Do whats best for you and your family.

Don’t love fresh milled flour YES! Do I recognize that not everyone can afford it, also yes!

Do the very best you can and know whatever you bake from scratch is FAR SUPERIOR than store bought 

I love using fresh milled flour in my sourdough recipes but fresh milled gets a bad wrap for being dense 

Fresh milled flour has incredible benefits:
1. The process of creating store bought, shelf stable flour essentially kills the wheat because it’s filled with Bleaching agents, preservatives, stabilizers, additives, and more

2. YOU get to take back your baking freedom and control the ingredient. 

YOU get to choose incredible grains that aren’t adulterated. 

Mixed with sourdough and you’re creating a powerhouse of a nutrient dense and good for you food. 

This is your sign to start milling your own flour.

3. Freshly milled flour has a deeper nutrient profile: more vitamins and minerals available for our bodies. 

4. Whole grains can help regulate blood sugar, sustain energy, boost metabolism, satisfy hunger and decrease cravings (due to fiber and protein in the berry)

Food really is medicine when we take the time to slow down and create we can get a much better product that brings us new flavors, different nutrients and enhances the baking experience.

The most common sourdough issues I see are super s The most common sourdough issues I see are super simple fixes…

What I see is:
Under feeding: that 1:1:1 ratio causes loads of issues. It’s a great starting point but don’t be afraid to give your starter more flour. I don’t aim for an amount but a texture. I aim for thicker than pancake batter

Use the right flour: but the very best flour you can afford and easily source. I prefer @centralmilling organic all purpose flour. It’s higher in protein and sourdough loves this flour. I would never use cake/pastry, self rising, or 00 flour for my starter

Lids! Cloth coverings are great but they often create too much airflow and dry out your starter. A lid resting on top NOT SEALED is the sweet spot. You still want airflow for fermentation to occur and your starter to breathe, a lid resting is 🤌🏽

Your starter doesn’t need to be in the microwave, oven, on a warmer or in a proofing box. Cold environments slow fermentation but it doesn’t stop it. You can absolutely create sourdough in these environments (ask me how I know)

Most importantly, HAVE FUN! Don’t stress. Message me WHENEVER you have questions or need encouragement

There’s no rule that says you can’t change your in There’s no rule that says you can’t change your ingredients 

If you want a different flavor of bread, change your flour!

I love bringing a new level of flavor to my sourdough bread by making this one change

When choosing a wheat, choose a hard variety like @grandtetonfamily yecora rojo. Remember hard varieties equal sunburst bakes like bread. Soft wheat is for your soft, delicate, flakey, pastry items (cookies, cakes, biscuits, pie crust)

Use high quality salt that contains trace minerals. My salt of choice: @redmondrealsalt you can see and taste the difference when you use this salt. 

And bonus tip: long ferment your dough. When you use an adequate starter amount in your recipe and long fermentation, you’re going to have an incredible tasting loaf
