4 things you should consider for a healthy and act

4 things you should consider for a healthy and active starter in the winter months…
-Time: cold temperatures slow fermentation but it does not stop fermentation. Give your sourdough MORE time to ferment and become active

-Feeding Consistency: ditch the ratios. They’re a good starting point but learn to read your sourdough. Do you need more or less flour in a feeding for it to become active. My personal sourdough starter likes to be thicker in winter and a bit thinner in summer.

-Nourishment: if your sourdough isn’t showing signs up happiness (comment SIGNS to know the signs of happiness) it may be time to give it some nourishment in the form of different flour or my great grandfather’s secret tip

-Heat: stop placing your sourdough starter in the oven and microwave. INSTEAD, let it be or if you MUST add heat choose the top of the refrigerator, an upper shelf, in front of the fireplace or bright window. But I’m here to tell you my house is usually about 62 degrees in winter and my starter thrives. Give it a chance to show you it is hardy and flexible.

What are your thoughts on sourdough discard??

I grew up never discarding and not practicing this method.

It’s not how my great grandfather taught us.

Do I think it has some merit?! Yes, when you’re establishing your sourdough starter from scratch

But unless you’re baking daily, there’s no need. You can have a healthy and strong starter without daily feeding.

In fact it can live in your fridge!

The thing I see the most is copious amounts of starter stored in jars which seems so wasteful that you’re storing flour like this.

You could have a lower grocery bill because you aren’t buying as much flour PLUS you’re not feeling the need to bake items you don’t normally consume because you have A LOT OF DISCARD stored up.

Comment STARTER for my sourdough winter care tips AND my year round baking strategy

here are a few things you need to know:

➡️Cold winter temperatures does not stop fermentation RATHER fermentation slows

➡️You’ll need to ditch the idea of having your starter double in 4 hours… two quick things about this 1️⃣The only time my starter ever doubles in four hours is in the absolute middle of summertime. Otherwise, I just always plan for a 12 hour doubling. 2️⃣ if you’re following this advice of it doubling in four hours please ditch it. It’s absolutely unreasonable and causes you undo stress.

➡️Do this: I would advise you to feed your starter at night in order for it to be ready the next morning then that way you can sleep and not worry about your starter doubling within a certain time frame. It’s literally doing it fermentation magic while you’re asleep.

Ditch the need for commercial yeast by using sourdough

sourdough gets a bad wrap because we’ve labeled it and given it too many rules.

You can literally just mix your sourdough starter, water, flour and salt and let it rest and you can bake a loaf of bread.

Yes, you might need to do a couple of folding techniques but if you’re a home Baker, just trying to make bread for your family, you can still make really good bread without being a slaveto a baking schedule.

Sourdough should fit into your life and your life not revolve around sourdough.

No you don’t need to take it to sports practice.
No you don’t need to be so rigid about every 15 minutes
No you don’t need to be temperature checking your dough
No you don’t need to feed your sourdough everyday.

I do need to make some bone broth and probably render some tallow as I’m trying to get back into the swing of preserving something every day (or every other)
