how often I feed, the formula I use for feeding my starter, and more on the cowboy way.

Here’s the short version of the Cowboy Way:
• we don’t discard
• we only feed our starter when we want to bake
• we keep our starters in the fridge
• we keep a small amount of a mother starter at all times
• we don’t feel pressured into making recipes we don’t typically eat
• we don’t spend a fortune on flour because we are discarding
• we let sourdough be a part of our life
• we don’t let our lives revolve around sourdough

If this sounds like the style of sourdough you want to be a part of, stick around!

When I teach about sourdough the mother is the portion you always reserve after feeding and your starter becomes active.
You have a small amount (1/4 cup) stored in a jar.

When you want to bake, you remove the mother from the fridge, feed it according to your recipe and allow it to become active.

Once active you reserve 1/4 cup and what’s remaining is what you’ll use for your baking.

With this method you’re not discarding your starter. You don’t have the copious amounts of discard being stored up or you don’t have a lot of flour being tied up in discard.

This is how my great grandfather taught us and it’s the way I practice sourdough.

Sunlight! Once I’m done cold fermenting my doug

Sunlight!

Once I’m done cold fermenting my dough and I’ve flipped my dough out of the bannetons and they’re in the oven baking….

My next step is to put my bannetons into the windowsill to dry out.

Once they’re dry, I tap out and gently brush away any excess rice flour and then they get stored away.

I don’t do anything fancy but sunlight really is a powerful tool

IF I do something with an inclusion, my bannetons with removable liners are my personal choice. BECAUSE if anything leaks or spills out I can wash the liners in the laundry.

My braided rope banneton is only for a non-inclusion loaf.

Please don’t think

Not another tool for the kitchen?!

A grain mill has been a valuable asset to my kitchen because I can now have a more sustainable option for flour

Not only this, creating freshly milled flour enhances the nutrient density on my bread and you can vary your grind to create coarse/cracked to fine textured flour

Is a grain mill for wheat only?! NO! You can create #glutenfreeflour with a mill (I’m not a gluten free baker, but my friend Jen @farmfreshfamily is the queen of gluten free!!)

IF you are someone, my dear friend included, who cannot even tolerate store bought flour but don’t necessarily need to be gluten free, what do you do? What other options do you have??

Start milling with a @nutrimill grain mill

But what wheat berries do you use?

Start digging into ancient wheat varieties like khorasan and einkorn. Many individuals tolerate these varieties because they aren’t adulterated, sprayed or modified.

Personally, for ancient grains I like @grandtetonfamily and @einkorn_com

For hard wheat & spring wheat varieties, @palouse_brand is my one stop shop!

Sourdough fit into our schedule and our lives never revolved around it.

As sourdough has become more and more popular, I see sourdough becoming more and more complicated

It shouldn’t be this way.

Sourdough should be simple. No fuss. No stress. Use what you have. And sourdough should be ENJOYABLE!

The secret ingredient is

Utilizing in season and straight from the garden fruit

(You thought I was going to say love)

By utilizing the freshest of ingredients, you get to lock in those in season flavors

You also get to control how much and what type of sugar you use.

Did you know…
Adding sugar into preserving our food, like jams and jellies is actually incredibly important!

Sugar does two things:
1️⃣ it helps to bind water to help decrease chances of spoilage
2️⃣ sugar acts as a preserving agent to help preserve color and taste.

Think about it. We eat with our eyes. We crave that vibrant just picked strawberry red jam. But when you eliminate sugar from your jam it turns a very pale and sad brown making our brains 🧠 think it’s gone bad.

If you’d rather have a low sugar jam, @pomonas.universal.pectin is my choice!

What makes pomonas pectin special? This pectin uses calcium chloride to bind the water molecules to aid in creating that signature “jam” texture and therefore doesn’t need the acid and sugar available.

With pomonas you use less sugar too! I opt for honey (which is why you always see me grabbing honey with my @azurestandard order).

Fruit + sugar + pectin + lemon juice = jam
(You know what’s missing food dye and high fructose corn syrup)

How to manage the crust on a loaf of bread!

If you struggle with a super crusty loaf of bread, here are my tips. My husband isn’t a crusty bread fan (meanwhile I love it!) but as the chef and baker in the house I choose to create what he enjoys:

Know your recipe! An artisan loaf will have a thicker crust! ESPECIALLY when it’s fresh (think 24 hours old). As it is stored the crust does soften especially when it’s stored in beeswax wraps

For artisan loaves (the high hydration sourdough loaves) place a baking sheet halfway through the bake. This will reflect some direct heat from the bottom of your loaves but not change the oven temperature

And if you do get a crusty crusty loaf, just make bread crumbs

Butter the tops of your loaves! This adds wonder flavor and softens the top. My favorite butters are @minerva_dairy and @rumianocheese

Proper storage is critical! Store in beeswax wraps (like the ones @farmandhive creates) or in @keeki_co bags

It’s time to get creative!

I get asked frequently what if I don’t have (blank) sourdough tool?! What do I do???

I’m one the mindset of get creative and use what you have at home

If you don’t have, don’t feel the need to rush out and buy equipment

Bannetons and breadbaskets can be made with a bowl and tea towel

Use a sharp knife if you don’t have a lame

Loaf pans can be used instead of Dutch ovens
