You’re never going to believe the secret ingredient!!!

Before I tell you, save this and reference this guide for when your starter needs some extra love and nourishment. 📌📌

Use POTATO WATER to refresh your sourdough starter
🥔🥔💦

1️⃣ begin by discarding all but 2 tablespoons of the starter
2️⃣ Grab a potato (I prefer idaho Russets), peel it, wash it and slice it.
3️⃣ To a pot add your potato top with filtered water and bring to a boil
4️⃣ Boil your potatoes until they are fork tender and remove from the stove.
5️⃣ Allow your potatoes and water to cool because the very last thing you want to do is pour the hot boiling liquid on top of your starter.✨✨✨✨
6️⃣Once your water is at room temperature pour off a 1/3 cup of water and add that into your 2 tablespoons of starter.
7️⃣ mix well and add a half a cup of organic all purpose flour (my choice of flour is @centralmilling).
8️⃣Mix and incorporate your flour top with a lid, beeswax wrap or a wet dish towel and set aside to rise

⏺️if you can, place in a warm environment (like on top of the fridge, a sunny window

➡️but not the microwave or the oven

and give it time to feed itself and rise like normal.

❕Remember sourdough takes time and you can’t rush the process but you should see that your starter has doubled in about 12 hours ❕if your house is cold like mine is (it was 63°) fermentation slows but does not stop in cold environments

Try this and let me know if it works for you

but this method is what my great grandpa swore by and it’s allowed us to have a sourdough starter that’s at least 80+ years old

I have to confess, I needed to change my mindset n groceries and how I fill my fridge and pantry.

I stopped viewing meals as individual events and

Instead I started viewing meals as a long term event.

Hang on, let me explain

Instead of going to the store multiple times a week or daily for the items I need to cook, I purchase more than one to have on hand

If you’ve been around here for a while, you’ve heard me suggest one for now, two for later.

This method helps build your pantry.

But let’s keep going!

I buy to help carry over.

I’ll buy a case of tomatoes but isn’t just for one meal.

It will make many meals for now and for months to come.

A case of tomatoes will make:
Pizza sauce
Chili
Spaghetti sauce
And so much more.

When I shop, I also think about:
What’s on sale
What special events are coming up

By not just focusing on TODAY but thinking down the line, has helped me to curb any excess spending, to use what we have in hand, to build a layered pantry.

Do we go without?
Yea maybe in the sense of I’m not running to the store for a single ingredient and I substitute or we just don’t “need” it.

One more tip, when you use the last one or are down to the last container, add it to your list.

I have a running list with my favorite online grocery store so that I never run out.

When I’m long fermenting my sourdough bread, my bread stays on the counter for just a few hours for bulk COUNTER fermentation, then it’s shaped, placed into my @bulkabaskets and then into the fridge for at least 24 hours and up to 3 days.

Your bread dough is baked from a cold state. Don’t make the mistake of bringing it from the cold and allowing it to sit at room temperature before baking. I’m talking HOURS here. A few minutes to flip out your dough onto the bread sling, score and bake is absolutely fine.

But to be more successful in your baking, your bread needs to be cold.

WHY do I long ferment?
Because sourdough is my leavening agent. I RARELY add any other leaveners to my recipes.

By allowing sourdough to ferment, you’re harnessing its ability to: naturally leaven your goods, break down the gluten to help you digest it better, harnessing sourdough to bring flavor, creating a more blood sugar friendly product, and so much more!

Those with gluten sensitivies should explore long fermentation with their sourdough recipes and not just use a discard recipe.

Sourdough discard isn’t truly fermented and really only adds moisture, some flavor and is a binder.

Now if it’s a recipe like cookies or cake, I do skip the bulk COUNTER fermentation and that dough/batter is placed straight into the fridge for cold fermentation

But won’t it be sour?
Nope! My sourdough bakes aren’t sour.

Sourness comes from decreasing the amount of starter in your recipe, changing the flour, time and temperature of fermentation or adding chemical agents (like citric acid or vinegar).

WHY do I long ferment?
Because sourdough is my leavening agent. I RARELY add any other leaveners to my recipes.
