Milling Mechanics

Mills are either going to have a stone based system or they’re going to use a metal, impact grinder. Stone based milling is the top choice because it wont heat the wheat to potentially break down nutrients. However, stone based milling does come with a price! The more affordable options for grain mills are the metal grinders.

Sourcing Grain

I want to just briefly touch on this because if you are going to be milling your own flour, you need to know where to source your grain. I simply cannot run to walmart and pick up a bag of wheat berries. Here are my top 3 companies I use for sourcing my grain:

  • Palouse Brand (discount code: THEFLOURINGHOME) I have had the pleasure of working alongside Palouse for a few months and I am impressed! Palouse is a small independent brand where you can order straight from them and its like ordering farm to table because they grow the wheat on their farm. If they don’t grow it, they will source some products like their beans and legumes, regionally. What they offer are non-gmo, glyphosate free and residue free. Palouse is woman owned and located in the Pacific Northwest.
  • Azure Standard I like Azure as an option because you can vary the quantity you want from as little as 33 oz to as much as 2000 pound tote. Azure does have organic options for their grain and legumes
  • Grand Teton Ancient Grain Ancient Grains are becoming increasingly popular due to their unadulterated status. Meaning they are not genetically modified or sprayed with glyphosate. I have a close family member with celiacs and cannot tolerate grain from the US, but can travel to Europe and consume the pasta made there. WHY?! Because the wheat in Europe (ITALY) isn’t modified and sprayed. Kamut/Khorasan and Einkorn are popular examples of these ancient grains.

How to store your grain

If you are going to be utilizing your grain quickly, then storing in the bag is fine. BUT most bags are not designed to weather the weather. Instead, I like to use 5 gallon buckets with gamma lids or glass jars sealed with for jar lids and their vacuum jar sealer (forjars discount code FLOUR10). For long term, we’re talking 5+ years, I will store my grain in mylar bags from packfresh (code flouring)
